Is It Christmas Yet?

Wow!  What an incredibly busy holiday season!  Feeling blessed and exhausted for the work that has come my way.  And I’m happy to say that with only 2 orders left to deliver (but already finished!) I will be kicking back and ready to relax in time to cook the holiday meals.  Which made me think about menus, which made me think about yummy snacks and appetizers, which made me think, hey, you might like this dip too!

I love a good Hot Spinach & Artichoke Dip.  And yes, there are many versions out there but I’m partial to this one.  Perfect to do with kids too – they love to squish stuff!  So, with the holiday spirit of giving, here it is!

Hot Spinach & Artichoke Dip

Ingredients:

14 oz can artichoke hearts, drained & roughly chopped

6 oz fresh baby spinach, stems picked & discarded

8 oz package cream cheese, softened

1 c grated parmesan

1 c shredded mozzarella

1 clove garlic, minced

1 shallot, minced

1 tsp worchestershire

1/2 tsp salt

1/4 tsp pepper

Method:

Preheat oven to 350°F.

Mix all ingredients together by hand, squishing & mashing.  Transfer to a 1qt. oiled baking dish.

Bake 20 minutes.  Stir mixture, then smooth again.  Top with an additional sprinkling of cheeses.  Bake another 20 minutes or until golden on top.

Serve with tortilla chips, veggie chips and crudité.
